Every few months we will offer one of our delicious recipes online for everyone to enjoy. This recipe is:

Chicken Tortellini

Ingredients:

4 - cups chicken broth
2 - summer squash, halved and sliced
6 - cups fresh spinach, or a 5-ounce package
      pre-washed spinach, julienned into small strips
1 - green pepper, chopped
3 - cups dried, frozen, or fresh cheese-filled tortellini
2 - medium yellow onions, cut into large wedges
4 - carrots, sliced
1 - teaspoon dried rosemary
2 - cups cooked and shredded chicken, about 3 boneless
      skinless chicken breasts
1 tablespoon fresh basil
salt and pepper to taste

 

Cooking Directions:

1. In a large stockpot, bring the broth to a boil over
 high heat.  Add the squash, spinach, green pepper, tortellini, onion, carrots, and rosemary.  Allow the vegetables and broth to return to boiling.  Reduce heat to medium, cover the pot, and simmer the soup for 15 minutes.

2. Stir in the chicken and basil and cook for 5 additional
minutes.  Add the salt and pepper to taste.  If desired, top each bowl with parmesan cheese.

 

Serves 6 - 8
